Baked after an old Appenzell tradition that dates back to the 16th century when the idea was born to mix honey dough with nut filling. The Appenzeller Biber is a soft gingerbread cookie filled with almond paste (marzipan), herbs and spices and has various traditional imprints from this eastern part of Switzerland.
