Besides William Tell, Sbrinz is one of the most famous names from Central Switzerland. Originally produced in the region of Brienz, the fame of Sbrinz cheese spread quickly across national borders as early as the 17th century. The merchants exported golden-yellow, firm Sbrinz wheels on mules across the “Devil’s Bridge” and St. Gotthard pass to Italy. In turn, they received rice, chestnuts and wine. No wonder, Sbrinz has a magnificent flavour, which lies hidden beneath its hard, golden-yellow rind, as rich as the alpine pastures with their tangy herbs.
