Raclette - a meltingly
smooth meal-sharing experience
This cheese derives its name from the French verb “racler”
meaning “to scrape off” because of the way it is eaten.
There are many stories about the origins of the traditional Raclette
meal. One claims that shepherds placed their cheese to close to
the fire and it began to melt. They then spread the melted cheese
on their bread, which tasted really good and is believed to have
been the first Raclette.
However, Raclette is both a cheese and culinary experience in one
and the unique melting properties of Raclette cheese make it a special
pleasure.
Today Raclette is more commonly melted on an electric tabletop
oven especially made for that purpose. Like Fondue it becomes a
participatory social meal and is very popular not just among winter
sport lovers but also during the summertime when it can be enjoyed
“al fresco” (outside).
The cheese is often accompanied by boiled potatoes (Gschwellti)
and dill pickles but you can add whatever you like i.e. pineapples,
mushrooms, peppers etc. Some ovens even come with a stone plate
on top and one can add various kinds of meat for an even greater
selection.
This cheese has a natural rind with a firm and semi soft texture
and a mild creamy flavour.
