One of Switzerland’s great cheese specialties comes from the unique Appenzell region. It was mentioned, for the first time, in a document some 700 years ago. Since then it has been a favourite with all connoisseurs. The unspoiled world of the mountains and rich herbal grass provide the ideal base for the healthy and nourishing milk, which is used for making Appenzell cheese. The art of cheese making is one of the carefully guarded traditions in the Appenzell region, similar to the traditions of music for strings, coin swinging and peasant painting.
